Scientists are evaluating how differences in corn genetics impact a type of fiber found in the outer layer (bran) of corn kernels. This fiber, called arabinoxylan, is linked to a healthier gut, steadier blood sugar and less inflammation. The goal is to use corn to support nutrition tailored to people’s health needs. The project has three main components: confirm which corn varieties produce the most of this fiber and what form it takes, test how eating it affects adults in diet studies and breed the fiber trait into high-performing corn lines that farmers already grow.
